Healthy cinnamon rolls with icing

Originally from the Scandinavian countries, this pastry rolled into all corners of the world, conquered Instagram and radically attacked the pastry popularity lists. They are a strong competition to donuts, cheescake, or croissants, due to their delicious cinnamon aroma.

Dough:
  • 240 ml milk
  • 60 g cane sugar
  • 1 packet yeast
  • 1 egg
  • 50 g coconut oil
  • zest of 1/2 lemon
  • 560 g spelt flour

Instructions

  1. Add 180ml of warm milk to a kitchen blender, together with 20g of cane sugar and crumbled yeast. Mix and then leave it to stand in a warm place for 10 minutes, so the yeast starts working.

  2. In a separate bowl, mix the remaining milk, melted coconut oil, egg, and lemon zest. Mix well so all the ingredients combine.

  3. Add the remaining sugar to the yeast starter and start to knead slowly. Add the liquid mixture from the previous step and start to slowly add the flour. Mix on a lower level and always wait for the flour to be incorporated before adding more. When you add up all the flour, start to knead on a higher level, faster. The dough should be compact, smooth and not sticky.

  4. Transfer the dough into a bowl greased with coconut oil, cover with a tea towel and leave it in a warm place for an hour.

  5. Meanwhile, prepare the filling by mixing all the cream ingredients thoroughly together.

  6. Once the dough has risen, move it from the bowl to a board dusted with flour and roll it into a rectangle of the size 50 cm x 65‑70 cm. Spread the prepared filling over the dough evenly and roll it up tightly. Cut it lengthwise to approx 3cm wide rolls. Transfer those to a baking tin lined with a baking paper so they are only touching slightly. Cover the tin with a teatowel and leave them to rise for half an hour.

  7. Preheat the oven to 180 °C. Bake the risen rolls for aout 30 minutes.

  8. Before they are baked, prepare the icing by mixing all the ingredients.

  9. If you want to really indulge, serve the hot cinnamon rolls immediately after baking, whilst still hot, covered in the icing. If you manage to NOT eat them all at once and actually have any leftovers, you can revive the flavour by quickly re‑heating them in a microwave (approx 30 seconds).
