- 10 g dried yeast
- 100 g cane sugar
- 70 g butter
- 1 egg
- pinch salt
- 100 g butter
- 150 g cane sugar
- 2 tsp instant coffee
- 2 tsp cocoa powder
- 2 tsp cinnamon
- 200 ml double cream 30%
- 125 g semi-fat quark
- 2 tbsp cream cheese
- 2 tbsp golden cane icing sugar
- 6 drizzles vanilla extract

Instructions
-
Start by making the yeast starter. Heat the milk in a saucepan, but make sure it doesn't boil or get too hot. Add in the cane sugar, dry yeast, and a teaspoon of flour. Combine and leave to sit for 15 minutes, until it rises.
-
Add flour and the starter to a large bowl. Start to mix, ideally using a kitchen blender with a hook. Then add eggs, softened butter and a pinch of salt. Form a smooth and slightly sticky dough.
-
Let the dough rise for at least an hour. It should double in size.
-
For the filling, melt the butter and mix it with the sugar, cocoa powder, cinnamon, and instant coffee.
-
Roll the dough out until it's 1 cm thick. Spread the filling over the top and roll it up from the longer side. Cut it into 12 rolls. Grease the baking tin with butter and then add the rolls.
-
Preheat the oven to 200 °C and bake for 25 minutes.
- Whisk the cream and add curd cheese, soft cheese, icing sugar and vanilla extract. Form a cream.
-
Spread the cream over baked and slightly cooled rolls and then sprinkle with cocoa powder.
-
Enjoy!
