  • 1 hard-boiled egg
  • 140 g avocado
  • 5 ml olive oil
  • 25 g Greek yoghurt
  • 10 g parmesan
  • lime juice
  • garlic granules
  • salt
  • pepper
  • water

Instructions

  1. Start by making the dressing: mix the avocado, hard‑boiled egg, yoghurt, oil and Parmesan. Add lime juice and seasoning to taste. If you like it looser, you can add some water or liquid from the yoghurt.

  2. Peel the shrimp (or buy them peeled), wash them, and season them with salt and pepper. Quickly grill them in a pan or on a grill, using a small amount of ghee.

  3. And you are good to go! Add your favourite salad leaves to a plate, followed by the shrimp and the dressing. You can top it with some extra Parmesan. You can add some grilled mini pizza bases to the side.
