  • 150 g bulgur
  • parsley leaves
  • mint
  • 3 tomatoes
  • spring onion
  • 30 ml lemon juice
  • 60 ml olive oil
  • salt
  • pepper
  • 100 g cucumber

Instructions

  1. Cook the bulgur according to the instructions.

  2. Meanwhile, mix chopped parsley, mint, tomatoes, spring onion, and cucumber in a bowl.

  3. When the bulgur is cooked, leave it to cool to room temperature or rinse it under cold water to stop the cooking process.

  4. Add the cold bulgur to the vegetables.

  5. Mix well, adding lemon juice, extra virgin olive oil, salt and freshly ground pepper.

  6. Leave it to cool for 30 minutes before serving, so the flavours can mix.

  7. Taste again before serving and season to taste with salt, pepper, and lemon juice, as needed.

  8. Serve cold as a refreshing side dish or as a main.
