Courgette season 🥒 is still in full swing and we have a recipe for crispy nuggets that are baked completely oil‑free thanks to air fryer.
Come enjoy those crispy nuggets coated in panko breadcrumbs, that make a perfect lunch for gluten‑free people too! 🤩

Per 15 portions
- 100 g courgette
- 2 eggs
- 60 g 30% edam cheese
- 60 g panko breadcrumbs
- 1 pinch salt
- 1 pinch smoked paprika
- 1 pinch garlic granules
- 100 g plain yoghurt
- 1 tsp chilli sauce
- 1 pinch salt
Instructions

Grate the courgette, add salt and wait couple minutes so they release water. Then squeeze them thoroughly through a cloth or a sieve. -
In a bowl mix grated cheese, courgettes, 2 eggs, 2/3 panko breadcrumbs (leave 1/3 for coating), salt and spices. Combine everything thoroughly.

Shape the mixture into nuggets, then roll them in breadcrumbs. Bake in an air fryer for about 15‑17 minutes at 200 °C.

Enjoy with a salad from rocket, red peppers and a sprinkling of salty muesli. Dip in yoghurt or chilli sauce.
