Feta is a cheese originating from Greece, and in order to bear its name, it must meet certain criteria. It is made from goat’s and sheep’s milk, with sheep’s milk making up at least 70% of the content. The cheese is then matured in a salty brine and, compared to Balkan cheese, which is made from cow’s milk, you’ll also find more fat in it. Due to its higher salt and fat content, feta is not a cheese that would be ideal to eat every day and without limits, but in reasonable amounts it is a great and delicious addition to your diet, giving your dishes that true Mediterranean flair.
No legume salad is complete without feta, but if you want to experiment a bit, try glazed carrots with whipped feta or a refreshing watermelon salad with feta cheese, which will be your lifesaver in the summer heat.
