Pastéis de nata (pastel de nata in singular) are famous Portuguese cups with a puff pastry base, filled with yolk custard. They're not healthy, let's be honest...but they are delicious.
To save you a trip across Europe and some calories too, we prepared a recipe for a healthier version. With a dose of protein on top, of course.

- 6 g fats
- 5 g protein
Per 12 portions
- 1 packet whole grain puff pastry
- 1 packet vanilla pudding
- 300 ml milk
- 30 g vanilla protein powder
- 100 g curd cheese
- 1 yolk
- 1/2 lemon juice
- zest of 1/2 lemon
- 1 tsp cinnamon
- vanilla powdered sweetener
Instructions

Preheat the oven to 200 °C.

Unless the pastry is already rolled out, roll it out on a floured surface. Using a glass, cut out 12 circles with the diameter of 8cm.

Grease the muffin tin with ghee or butter. Add the dough circle into each and press it in, so it covers the whole tin and create a cup you can later fill with the cream.

To start the filling, cook custard with 300ml of milk. Once thick, take it off the heat and add the rest of the ingredients.

Fill the cups with the filling.

Bake for 15 minutes or so. The surface of the cups should be baked with some darker spots.
