Homemade sriracha: Thai chilli sauce

This is one for spicy food lovers. Sriracha is made from chilli peppers, garlic, and vinegar. It's great for adding flavour to soups, sauces, marinades or with different meats and vegetables.

  • 300 g jalapeno peppers
  • 4 cloves garlic
  • 1/2 cup rice vinegar
  • 2 tbsp cane sugar
  • 1 tbsp salt

Instructions

  1. Wash the chillies and chop them into smaller pieces. Remove the seeds so the sauce isn't too spicy.

  2. Chop the garlic into smaller pieces.

  3. Add the chilli peppers and garlic to a blender and blend until you have a smooth paste. Transfer the paste to a saucepan and add the vinegar, sugar, and salt.

  4. Bring to a boil and cook for 10‑15 minutes, until it thickens.

  5. Leave it to cool to room temperature and then pour it back into the blender.

  6. Mix until you have a very smooth paste. Transfer it to sterilised jars and close them. Keep in a fridge and consume within a month.

  7. You can also make the sriracha by fermentation. For this process, you just need to let the ingredients, without the vinegar, ferment at room temperature for 3‑5 days. This process makes the sauce naturally acidic, so you can just fine‑tune it with vinegar later. However, the above method is faster and simpler.
