We used blueberries this time, but these popsicles are versatile- perfect for any fruit you have on hand. Whether it's blackberries, raspberries or gooseberries, they're the ideal way to make the most of your garden produce.

Per 4 portions
- 250 g non-fat Greek yoghurt
- 50 ml milk
- 30 g vanilla protein powder
- 1/2 vanilla pod
- 100 g blueberries
- 1 tbsp chicory syrup
- 50 g white chocolate
- 10 g pistachios
Instructions

Cut the vanilla pod lengthwise and scrape out the seeds from one quarter with the tip of a knife.

In a bowl, whisk a scoop of protein in the milk until smooth. Then mix with the yogurt and vanilla.

Remove as much water as possible from the frozen blueberries and then mix with another quarter of the vanilla seeds and a spoonful of chicory syrup.
(If your blueberries are fresh, throw them in a pot with a tablespoon of water for a few minutes and simmer until soft.)

Now it's time for fulfillment.
Put two tablespoons of fruit mixture into the popsicle molds, top up the rest with the yogurt mixture and add a spoonful of blueberries on top. Finally, place the popsicle sticks in the freezer overnight.

The next day, dip the popsicles in white chocolate and sprinkle with chopped pistachios.
