Have you been blueberry picking yet this year? The season is in full swing! How about turning those fresh blueberries into delicious homemade white chocolate popsicles which will refresh you during the summer days? Plus, by skipping the chocolate garnish, even vegans can indulge in them!

- 100 g coconut milk
- 150 g coconut yoghurt
- 60 g blueberries
- 10 g freeze-dried blueberries
- 20 g chicory syrup
- 100 g white chocolate
- 15 g coconut oil
Instructions

Put 100g of the solid part of the canned coconut milk into a blender. Add the remaining ingredients for the popsicles and blend everything together.

Pour blueberry mixture into popsicle molds. Add the popsicle sticks and refrigerate for at least 3 hours.

In the microwave, melt the white chocolate with the coconut oil until smooth. Transfer the frosting to a taller glass (one that will fit the popsicles when you wrap them).

Remove the frozen popsicles from the mould, dip them in chocolate and decorate them - with freeze‑dried blueberries or drizzle with dark chocolate.
