- 2 eggs
- 50 g blueberries
- 1/2 lemon juice
- zest of 1/2 lemon
- 1 tbsp plain yoghurt
- 15 g vanilla protein powder
- vanilla powdered sweetener
Instructions

Preheat the oven to 170°C.

Separate the eggs and put the yolks into a medium bowl. Add lemon juice and zest, yoghurt, protein powder, and sweetener (if using). Mix.

Whisk the whites into stiff peaks and then add to the yolk mixture.

Heat ghee in a pan, then lower the heat and pour in the batter. Cook for 1‑2 minutes. Once the surface starts to set, you can top the omelette with blueberries.

Transfer the pan into a preheated oven and bake for 15 minutes or so, until the omelette is fluffy and the top is golden brown.

Serve with yoghurt and fruit.
