Per 6 portions
- 250 g toast bread
- 100 g high quality ham
- 100 g bacon
- 150 ml milk
- 200 g cottage cheese
- 60 g baby spinach
- 150 g leek
- 30 g wild garlic
- 6 eggs
- 30 g of grass-fed ghee
- 1/2 tsp baking powder
- 1/2 tsp onion granules
- salt
- pepper
- pinch nutmeg
Instructions

Dice the sandwich bread and soak it in milk. Add the cottage cheese and leave to soak for a couple of moments.

Dice the ham and bacon and add it to the bread.

Next, all the greens – roughly chopped parsley, leek, wild garlic and baby spinach.

Mix well. Add seasoning, salt and pepper.

Separate the yolks and whites. Whip the yolks into foam and add them to the mixture together with melted butter. Add the baking powder and mix. Whip the whites into stiff peaks.

Now add the stiff peaks to the mixture to add some fluffiness.

Grease the baking dish with butter and then add the stuffing mixture.

Bake at 180 °C for 30 minutes.

Serve the stuffing with meat as a side, or just on its own.
