Baked Courgettes with Minced Beef

  • 3 courgette
  • 1 packet beef mince
  • 1 packet tomato puree
  • 1 onion
  • 1 packet mozzarella
  • 2 cloves garlic
  • salt
  • pepper
  • 1 tbsp oil
  • oregano
  • 100 ml water

Instructions

  1. Prepare all your ingredients and a baking tray lined with baking paper. Preheat your oven to 180 degrees.

  2. Cut the courgettes lengthwise and carefully scoop the flesh out. Dice the flesh finely and set it aside.

  3. Put the courgette skins on the baking tray, drizzle over some olive oil, and add salt and pepper. Bake it in the oven at 180 degrees for 15 minutes.

  4. Whilst they're in the oven, prepare your filling. Fry the onion using a tablespoon of olive oil. After a couple of minutes, add the meat and cook unti it's brown. Add the diced courgette flesh, one pack of tomato concentrate and 100ml of water. Add more salt, pepper and herbs. Leave it to saute until tender, for about 15 minutes.

  5. Slice the mozzarella finely. Melt half of the mozzarella in the meat mixture and set the other half aside for topping.

  6. When most of the liquid has evaporated from the meat mixture, load the baked courgettes. If you have any leftover meat sauce, store it in the fridge. It's great the next day as a pasta sauce too.

    Top the courgettes with the slices of mozzarella and bake for 15 minutes. You can also put it under the oven grill for a couple of minutes, just make sure you don't burn it!

  7. Serve it with a light side salad and garnish with fresh basil. If you're really hungry, you can also add a couple of pieces of a wholemeal baguette.
