Then this recipe is great for you, bringing some novelty. These loaded sweet potato skins have it all. They're healthy, nutritious, and look amazing.

  • 1 sweet potato
  • 2 eggs
  • 20 g prosciutto
  • 20 g cheddar
  • salt
  • pepper
  • herbs

Instructions

  1. Roast the sweet potato at 200 °C for 45 minutes.

  2. Slice it in half and scoop out the flesh until you're left with just a little and the skin (about 160g).

  3. Line each skin with a slice of Prosciutto and crack in one egg. Season with salt and pepper, herbs, and sprinkle over the grated cheese. Bake for another 10‑15 minutes, until the egg is cooked.
