- 1 sweet potato
- 2 eggs
- 20 g prosciutto
- 20 g cheddar

Instructions

Roast the sweet potato at 200 °C for 45 minutes.

Slice it in half and scoop out the flesh until you're left with just a little and the skin (about 160g).

Line each skin with a slice of Prosciutto and crack in one egg. Season with salt and pepper, herbs, and sprinkle over the grated cheese. Bake for another 10‑15 minutes, until the egg is cooked.
