- 150 g sweet potato
- 100 g avocado
- 65 g cherry tomatoes
- 15 g red onion
- 1 tsp lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 10 g Feta cheese
- pinch parsley sprig
- 3 ml olive oil spray
Instructions

Peel the sweet potato and cut into rounds. Place on a baking tray lined with baking paper, spray with oil and salt.

Place in a preheated oven at 180 °C for 10‑15 minutes.

Mash the avocados. Add finely chopped tomatoes and onion. Season with lemon juice, salt and ground black pepper.

Spoon heaping spoonfuls of avocado spread over the baked sweet potatoes. Crumble cheese on top and sprinkle with parsley or cilantro.
