- 80 g protein pancake & waffle mix
- 120 ml water
- pinch vanilla powder
- 50 g blueberries
- 1 tsp chia seeds
- 60 g non-fat Greek yoghurt
- 1 tbsp vanilla micellar casein protein
- blueberries
- peanut topping
Instructions

Mix Vilgain pancake mix with water, blueberries and ground vanilla. Mix the batter and let it rest for about 3 minutes. -
Meanwhile, mix the Greek yogurt with the protein powder until smooth.

Melt a teaspoon of ghee in a pan.

Pour the batter into the hot pan and let it bake until the pancake starts to "bubble".

Once the pancake is bubbling, start "tearing" the batter and stirring it with a spoon like scrambled eggs.

Stir until golden brown on all sides.

Transfer the scrabled pancake to a bowl, top with Greek yogurt, garnish with fresh blueberries and drizzle with peanut butter. Finally, sprinkle with chia seeds and serve!
