- 900 g chicken meat
- 80 ml olive oil
- 1 tbsp apple cider vinegar
- 1/2 lemon juice
- 1 tsp lemon zest
- 2 tsp oregano
- 3 cloves garlic
- 1/2 tsp salt
- 1/2 tsp Kampot pepper
- chilli flake
- 1 courgette
- 1 red onion
- 1 red bell pepper
- 300 g Greek yoghurt
- 1/2 cucumber
- 1 tbsp dill
- lemon juice
- salt
- pepper
- 1 tbsp olive oil
- 1 clove garlic
Instructions

Dice the chicken (you can use thighs, breasts or a combination) into larger chunks. Cut the courgette into 1cm thick halfmoons, dice the pepper and slice the red onion into half‑moons too.

Transfer the chicken into a bowl, pour over olive oil, add then apple cider vinegar, lemon juice, grated lemon zest, grated garlic and seasoning. Mix well and leave it to marinate in the fridge for at least 30 minutes (preferably overnight).

Meanwhile, prepare the Tzatziki. Put Greek yoghurt into a bowl. Add the grated cucumber (squeeze out any excess juice), grated garlic, salt, pepper, and olive oil. Mix well and leave to rest aside.

Make the skewers by adding meat and vegetables, one after the other, until you run out. This amount should make about 12 skewers.

Grill them on all sides on a hot grill. You can also add a halved lemon to the grill top for more flavour.

Serve the skewers with the Tzatziki. Use pita bread, roasted potatoes or vegetable salad as a side.
