- 110 g spelt flour
- 35 g coconut flour
- 20 g cocoa powder
- 1 yolk
- 50 g coconut oil
- 65 g honey
- 15 g dark chocolate
- 500 g of lumpy curds
- 50 g vanilla protein powder
- 2 eggs
- 30 g pear pudding
- 40 g honey
- zest of 1/2 lemon
- 250 g pears
- cinnamon
- 10 g coconut chips

Instructions

For the dough, prepare spelt and coconut flour, cocoa, honey, yolk and melted coconut oil. You will get a crumbly dough. Press it into a pie dish. Top it with grated chocolate and bake in an oven preheated to 180 degrees for 5 minutes.

Meanwhile, prepare the filling. Mix quark, eggs, protein, custard powder, lemon zest, and honey. If you prefer it sweeter, you can add more honey or protein. Use a stick blender and run it for a couple of short bursts to make the mixture smoother.

Pour the topping over the baked dough and spread it over evenly. Top it with sliced pears.

Bake for 35 minutes or until the top of the pie is golden brown. Leave it to cool completely and serve. Top it with some cinnamon, coconut chips and powdered sugar.
