Per 4 portions
- 1 cauliflower
- 150 g high quality ham
- 150 g cheddar
- 3 eggs
- 200 g sour cream
- 50 g plain flour
- 50 g of grass-fed ghee
- 150 ml milk
- breadcrumbs
- salt
- pepper
- nutmeg
- ghee butter spray
Instructions

Preheat the oven to 180 °C, grease the baking dish with some ghee and dust it with breadcrumbs.

Cook the cauliflower in salted water(for 10 minutes or so) then drain it and leave it to cool.

In a small bowl, melt some ghee, add flour and mix into a smooth paste. Gradually whisk in the milk to create a Bechamel sauce. Season it with salt, pepper and nutmeg.

In a separate bowl, whisk the eggs and sour cream. Add the cooked cauliflower, cubed high‑quality ham and half of your favourite cheese. We used Cheddar.

Pour in the Bechamel and mix well.

Transfer the mixture into the baking tray, sprinkle over the rest of the cheese and bake it for 30‑35 minutes.

Serve it with potato mash or a side salad.
