Let's make those fit and impressive muffins!

Per 12 portions
- 100 g bezlepkové mouky
- 20 g cocoa powder
- 40 g dark chocolate
- 10 g baking powder
- 50 g xylitol
- 30 g baking protein
- 50 g of grass-fed ghee
- 2 eggs
- 135 ml milk
- 1 pinch salt
- 200 g sour cream
- 250 g light curd cheese
- 1 banana
- 10 g dark chocolate
Instructions

Start by making the sponge.

In a bowl, mix all the dry ingredients – flour, cocoa, baking powder, xylitol or another sweetener, baking protein (or chocolate protein) and a pinch of salt.

In a small bowl, melt the dark chocolate with clarified butter. You can use a water bath or microwave. Leave it to cool for a bit, and then add the chocolate, together with milk and egg, to the dry ingredients.

Preheat the oven to 175 °C with hot air. Divide the batter into 10 muffin cups and bake it for approximately 20 minutes.

Meanwhile, prepare the cream.
Mix the curd cheese and sour cream in a bowl. If you want to, add a little bit of sugar. Add in the chopped dark chocolate or chocolate chips. Leave it in a fridge for a while.

Let the baked muffins cool. Then make a hole in the middle and keep the batter you take out for later.
Now for the filling:
1. Add in a spoonful of cream.
2. Add 2 slices of banana.
3. Add another spoonful of cream.

Crumble the batter you took out and spread it over teh top of the muffins. Enjoy!
