Meat mixture:

  • 3 tsp pesto genovese
  • 2 tbsp grated mozzarella cheese
  • 4 slices tomatoes in oil
  • baby spinach
  • 2 tbsp parmesan

Instructions

  1. Start by mixing the chicken mince with salt, pepper, and Italian seasoning. Roll it out to be about 0,5cm thick, so it doesn't rip.

  2. Spread the pesto over 1/2 of the chicken. Add baby spinach, grated mozzarella, sundried or fresh tomatoes, and fold the other half over. Press down on the edges to create a pocket.

  3. Spread Parmesan on both sides of the pocket, and place it in an oven preheated to 180 °C for 30‑35 minutes.

  4. That's it! Enjoy!
