Carrot wraps with pulled beef

Everyone loves a good tortilla dish. But if you are looking for a delicious way to incorporate more vegetables into your diet or just want to try a new recipe, we've got a great alternative to the classic wheat tortilla. You can make those carrot wraps from three basic ingredients. They are super soft and easy to wrap up. By adding fresh avocado, juicy pulled beef, spinach and pickled onions, you create a nutrient- and protein‑packed dish. The perfect quick lunch or light dinner that will fill you up and keep you going for the rest of the day. 🌮🥕

Wraps:
  • 200 g carrots
  • 100 g gouda
  • 2 eggs
  • salt
  • white pepper
  • chilli flake
  • dried basil
Filling:
  • 120 g avocado
  • salt
  • white pepper
  • chilli flake
  • 40 g baby spinach
  • 150 g of Vilgain pulled beef
  • 60 g pickled red onions

Instructions

  1. Peel and grate the carrot roughly. Add grated cheese, 2 eggs, and season the mixture with some salt, white pepper, and other seasonings you like. Mix thoroughly.

  2. Line the tray with baking paper. Using a spoon, create 4 circles on the thinner side. Use the spoon to smooth them, ensuring their edges are smooth too.

  3. Place the baking tray in an oven preheated to 200 °C and bake for 15 minutes or until the edges of the cheese turn golden and the wraps are set. Remove the tray from the oven and let them cool down so you can remove them from the baking tray.

  4. Spread each wrap with a layer of mashed and seasoned avocado (we recommend adding a couple of drops of lemon juice for flavour and to prevent the avocado from changing colour). Add a couple of leaves of baby spinach.

  5. Divide the pulled beef (optionally, you can heat it) into 4 portions and add to the wrap. Finish it all with the pickled red onion.

  6. Carefully fold the wrap in half (like a taco) and enjoy!
