The base is mashed broccoli with egg and cheese. Then you simply add juicy pulled chicken, corn and Italian seasoning. You mix everything in a baking tray, add another layer of cheese and put it in the oven. A perfect dish, you can also divide it into 6 lunch box portions and have your meal prep done for days ahead!🚀

- 2 ml avocado oil
- 350 g broccoli
- 200 g grated mozzarella cheese
- 3 eggs
- 100 g sweetcorn
- 300 g chicken thigh in brine
- salt
- pepper
- Italian seasoning blends
Instructions

Lightly spray the baking tray with avocado oil so the mixture doesn't stick to it. Preheat the oven to 190 °C.

Put the pre‑cooked broccoli into the tray. Add in the grated mozzarella and crack in 3 eggs.

Mash it all together and mix it too.

Add the corn and pulled chicken.

Season with salt, pepper and Italian seasoning. Mix again so the corn and chicken are evenly spread. Then smooth the surface over with a fork.

To finish, sprinkle the top with the remaining grated mozzarella.

Transfer into the preheated oven and bake for 20‑25 minutes, until the egg is set and the cheese on top is golden. Leave it to cool for a couple of minutes after baking and then slice into 6 squares.
