- 4 whole wheat tortillas
- 8 eggs
- 1 low fat cottage cheese
- 3 tbsp pepper bells
- 2 tbsp spring onion
- 6 cherry tomatoes
- 1 pinch salt
- 1 pinch pepper

Preheat the oven to 190 °C. -
Cut the tortillas into rounds. If you don't feel like doing that, feel free to use our mini pizza base, which serves the same purpose and you'll have your little rounds ready. Press them into the muffin tin.

In a large bowl, whisk the eggs and cottage. Season with salt and pepper. Carefully pour the egg mixture into each cupcake so that it is about ¾ full.
