Instructions
-
Let's start with the sweet potato purée. Wash the potatoes, prick them a couple of times with a fork and then bake at 180 °C for 30–40 minutes, until they're tender. Then peel them and mash with a stick blender, adding a little bit of salt and milk, until you have a smooth purée.
-
Meanwhile, prepare the teriyaki sauce. In a pan, mix sriracha, soy sauce, honey, sesame oil and water. Leave it to simmer on a low heat for 1‑2 minutes.
-
Wash a piece of salmon. Cover all its sides with the teriyaki sauce and roast at 180 °C for 10 minutes. Keep half of the teriyaki sauce for serving.
-
Cook the second side, the broccoli. Put it in boiling water, cook for 3 minutes and then immediately cool down with cold water, to stop the cooking process and keep the broccoli green and tender.
-
And you're ready to start serving! First, add a scoop of the sweet potato purée, add the salmon, pour over the teriyaki sauce, add the broccoli, sprinkle over sesame seeds and enjoy!
