Instructions

  1. Preheat the oven to 180 °C.

  2. In a large bowl, mix all the dry ingredients – both the flours, baking powder, protein, erythritol, and cinnamon.

  3. Mash the banana using a fork.

  4. In a separate bowl, mix the curd cheese, egg and melted ghee. Add lemon zest and juice. Add in the mashed banana, and then pour the wet mixture into the dry one. Make a batter.

  5. Make the cream by mixing all the ingredients.

  6. Line the bread tin with a baking paper and start layering up. Start by spreading 1/3 of the batter to the bottom. Follow it with 1/3 of the cream. Repeat the steps. With the final third of the cream,  make a spiral pattern.

  7. Bake the bread in the preheated oven for 55 minutes or so. Leave it cool completely after baking. Don't rush it! The truth is that it tastes best the next day.
