Bundt take is a classic that we all like once in a while, but if you are always looking into ways to boost your protein intake, this grandma's favourite might be a tricky one. But we found an easy solution - add some quark and banana. Quark makes it super smooth, and banana helps with the consistency and sweetness, too. If you currently have any ripened bananas looking a bit sad, this is a great recipe to use them in.

- 250 g spelt flour
- 3 bananas
- 250 g curd cheese
- 3 eggs
- 12 g baking powder
- 1 tsp vanilla extract
- 100 g coconut oil
- pinch salt
- lemon zest
Instructions

Preheat the oven to 180 °C and grease the bundt pan with some coconut oil.

Peel and mash the ripened bananas, then add the quark, eggs and melted coconut oil. Then add the vanilla extract.

Slowly add in the flour, baking powder, a pinch of salt and sugar. Also, add the lemon zest from an organic lemon.

Pour the smooth batter into the prepared tin and bake for 40‑45 minutes.

Leave it to cool and serve.
