Sundried tomato pasta is a great choice for a quick and delicious lunch or dinner. It's a simple recipe that packs in a lot of flavour. The sundried tomatoes bring an intense, sweet and sour taste. You can also adjust it to your taste by adding extra ingredients, such as olives, prawns or spinach.

  • 250 g penne pasta
  • 40 g dried tomatoes
  • 2 cloves garlic
  • 2 tbsp olive oil
  • fresh basil
  • 40 g parmesan
  • salt
  • pepper

Instructions

  1. Cook the pasta according to the instructions, al dente. Drain and set aside.

  2. Heat olive oil in a big pan over medium heat. Add the minced garlic and sundried tomatoes. Cook until the garlic is fragrant, and the sundried tomatoes heat through.

  3. Add the cooked pasta and mix. Sprinkle over some fresh basil and season with salt and pepper.

  4. Serve with grated Parmesan.
