- 50 g hazelnuts
- 50 g coconut flour
- 30 g chocolate & hazelnut protein powder
- 2 tbsp of hazelnut butter
- 2 tbsp maple syrup
- 50 g dates
- 30 g cocoa powder
- 60 g dark chocolate chips
- 1 tbsp coconut oil

Instructions

Soak the pitted dates in hot water for at least half an hour. Then mix them into a smooth paste, using a small splash of the soaking water.

Blend the hazelnuts into a powder. Add coconut flour, cocoa and protein (if using). Mix well. Add the hazelnut butter, maple syrup and date paste to the dry mixture, and make it into a dough using your hands.

Melt the chocolate pieces and coconut oil in a saucepan. The chocolate shouldn't be neither too thick nor too thin.

Tear away a small piece of the dough at a time, wrap it around the whole hazelnut and roll it into a ball. Dip the ball in the chocolate and then coat it in chopped hazelnuts.

Transfer the truffle into mini paper cups. You can also put them onto a plate lined with baking paper until the chocolate firms up, and then transfer them into a box. Store them in a fridge or another cool place. We recommend you make them no earlier than 2 weeks before Christmas.
