Per 4 portions

  • 4 chicken breasts
  • 125 g mozzarella light
  • 8 dried tomatoes
  • 2 tbsp olive oil
  • 2 cloves garlic
  • oregano
  • salt
  • pepper

Instructions

  1. Preheat the oven to 200°C.

  2. Create a pocket from each chicken breast, carefully opening it with a knife and leaving about 1cm edge.

  3. Insert a slice of mozzarella and a few sun‑dried tomatoes into each breast.

  4. Close and secure the chicken breasts with toothpicks or kitchen twine.

  5. In a small bowl, mix the olive oil, garlic, oregano, salt and pepper. Brush the chicken breasts with the mixture on each side and transfer them to a baking tray lined with baking paper.

  6. Bake them for 25 minutes or until they're done.

  7. Serve it with your favourite side, like mashed potatoes, rice or salad. Enjoy!
