A quick dinner done in a few moments that will keep you full for longer? Try this stuffed chicken breast, which you can fill with whatever you like - or have available. We went Italian, with sun‑dried tomatoes and mozzarella. What are you going to choose?

- 4 chicken breasts
- 125 g mozzarella light
- 8 dried tomatoes
- 2 tbsp olive oil
- 2 cloves garlic
- oregano
- salt
- pepper
Instructions

Preheat the oven to 200°C.

Create a pocket from each chicken breast, carefully opening it with a knife and leaving about 1cm edge.

Insert a slice of mozzarella and a few sun‑dried tomatoes into each breast.

Close and secure the chicken breasts with toothpicks or kitchen twine.

In a small bowl, mix the olive oil, garlic, oregano, salt and pepper. Brush the chicken breasts with the mixture on each side and transfer them to a baking tray lined with baking paper.

Bake them for 25 minutes or until they're done.

Serve it with your favourite side, like mashed potatoes, rice or salad. Enjoy!
