You get home after a long, stressful day at work or school, and you are looking for something to soothe your nerves...There is no one else home, and you don't want to just grab a protein bar full of sugar, which is waiting in the cupboard...sounds familiar? We're here to help with an easy recipe for a dessert for one. You can prepare this one ahead and then relax. The only remaining dilemma is whether you will have one or two of those baked quarks with currants, with stunning 27g of protein per portion.

Per 2 portions
- 250 g curd cheese
- 150 g Greek yoghurt
- 1 egg
- 1 tsp baking powder
- 2 tsp vanilla pudding
- 10 vanilla stevia drops
- 20 g ghee
- 30 g xylitol
- 20 g bread flour
- 20 g currant

Preheat a fan oven to 180 °C.

In a bowl, mix a cubed quark, Greek or extra creamy yoghurt, egg, baking powder, vanilla powder and a few vanilla stevia drops.

Divide the mixture between two ovenproof bowls or ramekins. Add your favourite fruits, for example, mixed berries. Top it with a crumble from flour, sweetener and ghee.

Put it in the oven and bake for about 45 minutes.
