You've got leftover apples, and you're craving something sweet, smooth and cinnamony? Try this recipe for a German apple pie, 'Apfelkuchen', filled with slices of apples. Its texture is brilliant, and so is the clean list of ingredients with clear origins - no artificial sugars, just plenty of fibre from the oat flour and a proper dose of protein from the eggs and Greek yoghurt. It makes an excellent and balanced snack or a cheeky sweet breakfast.🍎

Per 10 portions
- 200 g plain flour
- 50 g oat flour
- 2 tsp cinnamon
- 12 g baking powder
- 100 g of grass-fed ghee
- 90 g coconut sugar
- 2 eggs
- 100 ml milk
- 100 g Greek yoghurt
- 4 apples
Instructions

Preheat the oven to 180 °C and prepare a round baking tin (we used a 20cm diameter one).

Mix the eggs and 70g of coconut sugar into a foam (keep 20g of sugar to sprinkle on top of the pie). Add the melted ghee, Greek yoghurt, milk, and mix well.

In a separate bowl, mix the flours, baking powder and cinnamon. Gradually mix in the dry mixture into the wet one.

Using a spatula, softly mix in the sliced apples.

Pour the batter into the tin and cover with the remaining coconut sugar (20g). Bake for 35‑40 minutes, until it turns golden.

Let it cool and serve it with a little bit of quark or drizzled with your favourite nut butter.
