Instructions

  1. Separate the yolks and whites. In a bowl, whisk the whites into stiff peaks. In a separate bowl, mix the yolks with sugar and melted butter until yellow, airy foam. Then add curd cheese, milk and a couple of drops of vanilla extract.

  2. Add flour and baking powder to the wet ingredients and mix.

  3. Finally, add the stiff peaks and make a batter.

  4. For the crumble, mix the oats, almond butter and cane sugar. Mix it using your hands.

  5. Pour the batter into a baking tray greased with butter.

  6. Add the red currants on top and then a layer of the almond crumble.

  7. Bake in an oven preheated to 180 °C for 35 minutes.

  8. Leave it to cool down after baking, and you are ready to serve.
