Coconut cookies ARE Christmas. 🥥 And it wouldn't be us if we didn't show you a slightly healthier version full of great ingredients. This is a safe bet. They're extra easy, and we're a little worried they won't make it to dinner because they'll be eaten right away. Let's do it.

Per 15 portions
- 1,5 cup coconut
- 2 egg whites
- 2 tbsp maple syrup
- 50 g dark chocolate drops
- 1 tsp coconut oil
Instructions

Preheat the oven to 170°C. Line a baking tray with baking paper. -
In a bowl, whip two egg whites into stiff peaks. Stir in the coconut and maple syrup.

Using a spoon, place the prepared mixture on a baking tray.

Bake for 20 minutes or until golden brown on top. Let them cool.

Melt the chocolate with coconut oil and whisk until smooth.

Dip the bottom part of the cookies in chocolate and place them back on the baking paper. Lightly drizzle the top of the biscuits with the remaining chocolate. Allow to cool completely and serve.
