Courgette season is finally here, but finding inspiration for what to do with all the produce can be a challenge. These courgette gnocchi are just what you need! A simple recipe that will revive the golden Slovak classic and perfectly nourish the body! 💪🏻

Per 4 portions

  • 300 g bread flour
  • 2 courgette
  • 2 eggs
  • 1 tsp salt
  • 150 ml milk
  • 250 g bryndza
  • 40 g bacon

Instructions

  1. Courgette Gnocchi with BryndzaIn a bowl, mix the flour, egg and salt. Add the grated courgette and gradually add the milk until you get a dough.

  2. In a pot, bring enough salted water to a boil. Using a special gnocchi grater or a small perforated ladle, form small pieces of dough and place them in the boiling water. Cook for 3‑5 minutes until the gnocchi float to the surface.

  3. Add the drained gnocchi to the bowl with the bryndza and stir to coat well. Add a little fried bacon and serve.
