This time, for a creamy Spanish‑inspired rice dish called fajitas, packed with protein, that's on the table in under 20 minutes! And you know what's also great? For 3 servings
- 150 g jasmine rice
- 300 g chicken breast
- 1 red onion
- 1 red bell pepper
- 1 green pepper
- 1 tsp garlic granules
- 1 tsp sweet paprika
- 1/2 tsp chilli
- 1/2 tsp pepper
- 1 tsp salt
- 1 tbsp olive oil
- 1/2 lime juice
- 100 g mozzarella
- 130 g non-fat Greek yoghurt
Instructions

In a bowl, mix the chicken meat cut into thin strips, chopped red and green peppers and chopped red onion. Add salt, pepper, dried garlic, ground paprika, chilli powder, olive oil and a splash of lime juice. -
Mix everything together and put it in a hot pan.

Fry for 10 minutes.

Then add the cooked rice, Greek yoghurt, and grated mozzarella, and mix everything.

You can serve it with chopped parsley and lime.
