Chicken Cacciatore, or hunter's chicken, is a traditional Italian dish that is simple to make but surprises you with its full flavour. It pairs well with rice, potatoes, or good‑quality rye bread.

  • 4 chicken thigh
  • 1 onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 150 g Portobello mushrooms
  • 400 g canned tomatoes
  • 120 ml white wines
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp oregano
  • salt
  • pepper
  • basil

Instructions

  1. Season the chicken legs on both sides with salt and pepper. Heat olive oil in a pan over medium heat. Add the chicken legs, skin side down, and fry until golden brow. This should take about 5 minutes on each side. Remove them from the pan.

  2. Add onion and peppers to the same pan and fry until tender, about 5 minutes. Add minced garlic and fry for another minute.

  3. Then add the white cup mushrooms and fry until they are soft and golden, about 5 minutes.

  4. Turn up the heat and add the wine. Cook until the wine is reduced by half. Add tomatoes, thyme, and oregano. Season with salt and pepper, and mix well.

  5. Add the chicken legs back in and spoon the sauce over them. Lower the heat and simmer, covered, for 25‑30 minutes.

  6. Enjoy!
