Per 3 portions

  • 390 g chicken breast
  • 250 g cottage cheese
  • 4 eggs
  • 4 tbsp olive oil
  • 1 tsp salt
  • pepper
  • ground paprika
  • soy sauce spray
  • rocket
  • 3 tsp parmesan

Instructions

  1. Finely slice the chicken breast.

  2. Season the chicken with salt, paprika, and black pepper and mix well.

  3. Heat a tablespoon of oil in a frying pan, add the chicken and drizzle over soy sauce.

  4. Fry the meat on each side for about 5 minutes, stirring occasionally so it is evenly cooked.

  5. Set the cooked chicken aside, and in the same pan, make some scrambled eggs with a little bit of salt.

  6. And let's plate up – using your favourite bowl, layer the chicken, rocket, cottage cheese and scrambled eggs. Sprinkle with Parmesan and drizzle over a small amount of olive oil.

  7. Enjoy!
