It couldn't be a simpler to have a dessert or snack to go. You mix it all in one bowl, pour it into a mould and bake it. Come try this healthy and quick banana bread with coconut, which, unlike the one from the cafe, contains less sugar and more fibre thanks to oat flour. We've added blueberries for extra smoothness and light acidity, but what fruit you throw in is up to you. 🫵🏻👌🏻

- 3 bananas
- 60 g coconut sugar
- 50 g coconut oil
- 2 eggs
- 10 drizzles vanilla extract
- 1 tsp cinnamon
- 250 g oat flour
- 1 tsp baking powder
- 30 g grated coconut
- 50 g blueberries
- 1 tbsp grated coconut
- 15 g blueberries

In a bowl, combine mashed bananas, sugar, melted oil, eggs, vanilla and blend until smooth.

Add the dry ingredients (flour, baking powder, cinnamon) and mix well.

Add the shredded coconut and blueberries and pour the batter into a baking tray lined with baking paper. You can add blueberries and some coconut on top.

Bake for 55‑60 minutes at 180 °C. After baking, let cool for a while and then enjoy.
