Do you love pizza rolls? It will surprise you how airy these are, even tho they don't use puff pastry. This dough makes them healthier, too. Let's do it!

- 300 g plain flour
- 150 g spelt flour
- 2 eggs
- 1 tsp salt
- 25 g olive oil
- 200 g milk
- 1 packet dried yeast
- 20 g cane sugar
- 1 sugo basilico
- 1 pinch pizza seasoning mix
- 400 g 30% edam cheese
- 100 g ham
- 1 pinch salt
Instructions

Prepare the starter, using warm milk, cane sugar and dried yeast.

Sieve flour into the starter bowl, add olive oil, eggs, a teaspoon of salt and leave it to rise. Knead the dough thoroughly, or use a kitchen mixer, until it's fully mixed. Dust it with some flour and leave it to rise in a warm place for 2 hours.
Tip: You can help the rising process by leaving the dough in a preheated oven for 2 minutes. Just ensure the bowl is oven‑proof.

When the dough has doubled in size, roll it thinly into a rectangle.
Brush the dough with sugo or pesto, sprinkle with pizza seasoning, salt and pepper, and add anything else you fancy. We chose ham and cheese.

Roll the dough up and cut it into 17‑19 equal pieces, using a string. Transfer them onto a tray lined with parchment paper and bake in the oven at 180 °C for 30 minutes.
