- 75 g oat flour
- 75 g plain flour
- 1 egg
- 40 g ghee
- 40 g coconut sugar
- 2 tsp matcha powder
- 40 g white chocolate
- 20 g freeze-dried raspberries
Instructions

Preheat the oven to 170 °C.

In a bowl, mix melted ghee with sugar and egg.

Add the flours, matcha powder and mix well until you have a smooth dough.

Add the white chocolate chips and freeze‑dried raspberries(you can also use fresh or frozen ones).

Form 8 equally sized balls from the dough, transfer them to a baking tray lined with baking paper, and lightly press them into a cookie shape.

Place them in the preheated oven for 10 minutes, or until they're golden around the edges and slightly crunchy.
