These cookies are soft on the outside and amazingly moist inside, and they're ready in 30 minutes. They go great with your afternoon coffee or as a lunchbox sweet treat. No difficult recipe steps, just mix the ingredients, shape and bake the cookies. Who could resist?

Instructions

  1. Preheat the oven to 170 °C.

  2. In a bowl, mix melted ghee with sugar and egg.

  3. Add the flours, matcha powder and mix well until you have a smooth dough.

  4. Add the white chocolate chips and freeze‑dried raspberries(you can also use fresh or frozen ones).

  5. Form 8 equally sized balls from the dough, transfer them to a baking tray lined with baking paper, and lightly press them into a cookie shape.

  6. Place them in the preheated oven for 10 minutes, or until they're golden around the edges and slightly crunchy.

  7. Enjoy!
