- 25 g coconut sugar
- 180 g oats
- 75 g of gingerbread nut topping
- 1 tsp gingerbread spice

Grind the oats until they resemble flour.

Put all the dough ingredients into a bowl and work up a thick dough. Use a fork first and then your hands.

The dough should be thick and non‑sticky. Roll it out on a dusted surface. The thickness is up to you.

Use your chosen cookie cutter. Transfer the cut figures onto a baking tray lined with parchment paper. Bake them at 175 °C for 10‑12 minutes.
