Quick lunch from one pot – farmer's potatoes with caramelised onion, this time flavoured with crunchy fried bacon. This dish is done in a jiffy, and you can easily prepare more for days ahead and simply heat it. You can also adjust the ingredients and make numerous variations, which means you won't get bored with it. 😍

Per 4 portions
- 1 kg potatoes
- 200 g bacon
- 2 onions
- 2 cloves garlic
- fresh rosemary
- 50 ml olive oil
- salt
- pepper
- parsley
Instructions

Preheat the oven to 200 °C. Wash, peel and cut the potatoes into slices about 1cm thick.

Leave the potatoes aside and prepare the bacon. Fry it in a pan until golden and crispy.

Use the same pan to fry the onion and garlic.

Add the sliced potatoes to a baking tray. Add some olive oil, two stems of fresh rosemary (if you don't have fresh, use dried), onion, garlic and bacon. Season with salt and pepper.

Bake for 30‑40 minutes, until tender.

Once cooked, sprinkle with chopped chives. Enjoy!
