Per 4 portions
- 40 g chicken breast
- Italian seasoning blends
- salt
- pepper
- pinch plain flour
- 1 tbsp ghee butter spray
- 3 cloves garlic
- 120 ml chicken broth
- 2 tbsp lemon juice
- 240 ml 12% single cream
- 240 g orzo pasta
- parsley
- lemon
- 1 tbsp olive oil
Instructions
-
Place the chicken on a cutting board. Season it with salt and pepper on both sides (you can also use garlic granules and Italian herbs) and dust it lightly with flour. Use your hands to work the seasoning into the chicken.
-
Spray some ghee into a deep pan. Add the chicken and fry on both sides until golden. Once ready, transfer to a plate.
-
Using the same pan, fry finely diced onion and minced garlic.
-
Add in the dry orzo and the chicken stock. Mix well, then cook the pasta until tender. If it's too dry, add more water.
-
Once tender, pour in the cream. Add olive oil, chopped fresh parsley, and lemon juice. Mix thoroughly until you have a beautifully creamy sauce.
-
Top the orzo with the chicken. Squeeze more lemon juice over the chicken; top with fresh parsley and lemon slices. Add some black pepper.
-
And that's it! Enjoy!
