- 1 sweet potato
- 2 onions
- 400 g canned tomatoes
- 300 g tomato puree
- 2 tbsp ghee
- 500 ml vegetable broths
- 100 ml plant based whipping cream
- 5 tsp dried basil
- 5 tsp garlic granules
- 5 tsp chilli
- salt
- pepper
- coconut oil
- 4 slices sourdough bread
- 6 slices cheese
- 5 tsp dried basil
- 1 tbsp coconut oil
Instructions

Clean and dice the sweet potato and onion. Preheat the oven to 180 °C. -
Put the sweet potato in a smaller baking dish, onion, salt, pepper, clarified butter and bake everything for about 25 minutes in a soften.

Put the baked pancakes in a taller dish. vegetables, canned tomatoes, tomato puree, broth, cream, basil, garlic, chilli and blend with a stick blender until smooth.

Pour the soup into a pot and cook for another 10 minutes.

Meanwhile, make yourself a cheese sandwich. Place slices of bread with cheese on a hot pan, fry them until golden brown and rub them with a mixture of oil and basil.
