Tomato Soup:
  • 1 sweet potato
  • 2 onions
  • 400 g canned tomatoes
  • 300 g tomato puree
  • 2 tbsp ghee
  • 500 ml vegetable broths
  • 100 ml plant based whipping cream
  • 5 tsp dried basil
  • 5 tsp garlic granules
  • 5 tsp chilli
  • salt
  • pepper
  • coconut oil
Cheese Sandwich:
  • 4 slices sourdough bread
  • 6 slices cheese
  • 5 tsp dried basil
  • 1 tbsp coconut oil

Instructions

  1. Sweet Potato & Tomato SoupClean and dice the sweet potato and onion. Preheat the oven to 180 °C.

  2. Put the sweet potato in a smaller baking dish, onion, salt, pepper, clarified butter and bake everything for about 25 minutes in a soften. Sweet Potato & Tomato Soup

  3. Put the baked pancakes in a taller dish. vegetables, canned tomatoes, tomato puree, broth, cream, basil, garlic, chilli and blend with a stick blender until smooth.

  4. Pour the soup into a pot and cook for another 10 minutes.

  5. Meanwhile, make yourself a cheese sandwich. Place slices of bread with cheese on a hot pan, fry them until golden brown and rub them with a mixture of oil and basil.
