In some cultures, lentils symbolise money, but this soup is also rich in fibre, plant proteins and complex carbs, which will keep you full for a long time. Per 4 portions
- 200 g black lentils
- 2 carrots
- 1/2 onion
- 2 cloves garlic
- 1 l water
- 1 tbsp himalayan salt
- pepper
- 1/2 tsp sweet paprika
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1 packet canned tomatoes
- 100 g tomato puree
- 1 tbsp olive oil
- 1 tsp garlic granules
- 1 bay leaf
Instructions

Chop the garlic and onion finely, and dice the carrots finely.

Fry the onion, then add the garlic, carrot and saute for a couple of minutes.

Add rinsed lentils and plum tomatoes (if they're too big, separate them into smaller chunks), and add water or stock.

Add salt, smoked paprika, thyme, and bay leaf. Cook until the vegetables are tender and the soup is thick.

Add tomato purée, leave it to simmer and add some oregano. Serve it topped with grated cheese, parsley and toasted bread.
