Many of us have Teflon pans at home. They are practical, easy to use and mean you can often cook with very little fat. In recent years, though, more people have started asking whether Teflon is safe, whether toxic substances can leach into food and whether scratched non‑stick pans are something to worry about.

What is Teflon?

Teflon is the trade name for a substance called polytetrafluoroethylene, or PTFE. In simple terms, it is a special type of plastic with an exceptionally slippery surface. Because food sticks to it less easily, it is often used as a non‑stick coating on pans, pots and baking trays.

One of Teflon’s main advantages is its high chemical and thermal stability. Under normal use, it does not easily react with food, significantly break down, or release large amounts of material into what you are cooking.

That does not mean it is indestructible. Teflon has limits. If a pan is overheated, scratched with metal utensils, or the surface starts to peel, it may no longer behave in the same way as an undamaged pan used at normal cooking temperatures. At that point, it is best to be cautious and stop using it.

Is regular cooking with Teflon dangerous?

When used correctly, probably not. Modern non‑stick pans, under normal cooking conditions, should not be a significant source of toxic substances. The FDA states that some PFAS are approved for use in non‑stick coatings, but that in these coatings they are polymerised, firmly bound and contain negligible amounts of PFAS capable of migrating into food.

The key phrase here is “under normal conditions”. This means:

  • the pan is not left empty on a high heat for a long time

  • the surface is not badly scratched or peeling

  • you use wooden, silicone or plastic utensils

  • you do not clean it with steel wool or abrasive cleaners

  • you do not use it for searing at very high temperatures

If you use a Teflon pan at low to medium temperatures for foods such as eggs, pancakes or delicate fish, the risk is probably low.

Problems are more likely when Teflon is treated like cast iron or stainless steel. In other words, when a pan is preheated empty for too long, used over very high heat, or left until it starts to smoke.

The biggest risk is overheating Teflon

Teflon can start to decompose at high temperatures. According to Poison ControlPTFE coating on cookware begins to break down at temperatures above approximately 260°C. When overheated, fumes may be released and inhaled.

These fumes can cause a condition known as polymer fume fever, sometimes referred to as “Teflon flu”. Symptoms can feel similar to a viral illness and may include:

  • fever

  • chills

  • headache

  • muscle aches

  • coughing

  • chest tightness

  • respiratory tract irritation

It is usually short‑lived, but it should not be ignored. Symptoms may appear several hours after exposure, so people may not immediately connect them with an overheated pan.

What about scratched Teflon?

Scratched Teflon is another important issue. It used to be said that if you accidentally swallowed a small piece of Teflon, “nothing would happen” because the material would pass through the digestive tract and be excreted. For a larger inert fragment, that may broadly be true.

However, newer studies suggest that a damaged non‑stick surface can release microplastic and nanoplastic particles. Onestudyfound that a damaged Teflon surface can release thousands to millions of particles during model cooking. The authors reported that a single surface crack could release around 9,100 particles, while a severely damaged coating could release up to 2.3 million microplastic and nanoplastic particles.

A single small scratch on a pan probably does not pose an immediate health risk. But if the surface is peeling, heavily scratched, losing its non‑stick properties, or shedding visible flakes, it is sensible to replace the pan.

It is not just about appearance. A damaged surface can mean:

  • more particles being released into food

  • poorer thermal stability

  • a greater risk of further peeling

  • reduced pan performance

  • needing to use more fat because food starts to stick

Teflon is easy to damage

The Teflon surface can be damaged quite easily. It is not a material that tolerates rough handling. The most common culprits are metal spatulas, forks, knives, steel wool, abrasive cleaning products and stacking pans on top of one another without a protective layer. Damage can occur even if you mainly use wooden or silicone utensils. 

At first, the marks may be tiny and barely noticeable. Over time, though, the surface can become more scratched, lose its non‑stick quality and eventually begin to peel. Once that happens, the pan no longer works as it should and may increase the release of small particles into food.

Microplastics and health: why should you care?

Microplastics are tiny plastic particles now found in food, water, air and even in the human body. Their health effects are still being studied, but the available evidence suggests they should not be dismissed as entirely harmless.

Several possible mechanisms are being discussed in relation to microplastics and nanoplastics, including:

  • inflammation

  • oxidative stress

  • disruption of the intestinal barrier

  • effects on gut microbiota

  • possible effects on the immune system

  • the transfer of other chemicals attached to the surface of the particles

One review article describes how microplastics can enter the body mainly through ingestion and inhalation. They may interact with the intestinal mucosa, disrupt gut microbiota, promote inflammatory processes and act as carriers for other environmental contaminants. However, research in this area is still at an early stage, and definitive conclusions cannot yet be drawn.

What about PFAS, PFOA and “forever chemicals”?

Teflon is often discussed in connection with PFAS. This is a large group of chemicals nicknamed “forever chemicals” because they are highly stable and break down very slowly in the environment. EFSA states that people can be exposed to PFAS in several ways, including through food. These substances can be found, for example, in drinking water, fish, fruit, eggs and egg products.

One of the best‑known PFAS is PFOA, which was previously used in the production of some fluorinated materials. PFOA is considered problematic and has been associated with a number of health risks. The International Agency for Research on Cancer classified PFOA as carcinogenic to humans, group 1, and PFOS as possibly carcinogenic to humans, group 2B.

However, a modern Teflon pan is not the same thing as free PFOA in the environment or contaminated drinking water. The greatest health concerns relate to long‑term exposure to certain PFAS through water, food, packaging or industrial contamination.

Even so, caution is sensible. If you have a very old non‑stick pan, do not know where it came from, or can see that the surface is damaged, there is little reason to keep using it. Replacing it is a simple way to reduce unnecessary exposure.

When should you throw away a Teflon pan?

A Teflon or other non‑stick pan should be replaced if:

  • it is scratched

  • the surface is peeling or flaking

  • there are visible flakes

  • food starts to stick badly

  • the surface is dull, cracked or uneven

  • the pan has been repeatedly overheated

  • it is a very old or of unknown origin

How to use Teflon more safely

If you use a Teflon pan, follow a few simple rules:

  • Do not preheat it empty for a long time

  • Do not use the highest heat setting

  • Cook at low to medium temperatures

  • Do not use metal spatulas, forks or knives

  • Wash it gently, without steel wool

  • Do not put it in the dishwasher

  • Do not let it burn or smoke

  • Ventilate the kitchen while cooking

  • Replace damaged pans

Teflon is better suited to gentle, low‑temperature cooking, such as eggs, omelettes, pancakes or delicate fish. It is not ideal for steak, high‑heat searing, high‑temperature baking or dry roasting.

What are the alternatives to Teflon?

Stainless steel pans

Stainless steel is a durable material suitable for most everyday cooking. It handles higher temperatures well and is useful for sautéing, cooking meat and vegetables and making sauces. Food can stick more easily, but with proper preheating and enough fat, stainless steel can be very effective.

Cast iron pans

Cast iron is heavy, durable and, with the right care, can last for decades. Over time, it develops a naturally non‑stick surface. It is particularly good for meat, potatoes, vegetables and baking.

Carbon steel pans

Carbon steel sits somewhere between stainless steel and cast iron. It is lighter than cast iron, copes well with high temperatures and develops a naturally non‑stick surface when properly seasoned.

Ceramic non‑stick pans

Ceramic pans are often marketed as an alternative to Teflon. It is still important to choose quality products, ideally those clearly labelled as PFAS‑free. Ceramic surfaces can be very non‑stick at first, but they often have a shorter lifespan than stainless steel, cast iron or carbon steel.

Should you avoid Teflon completely?

No, you don't have to. If you have a good‑quality, undamaged Teflon pan and use it sensibly, there is no need to panic. The problem is not occasional use. The bigger concern is daily use of an old, scratched pan, overheating it or looking after it poorly.

What’s the takeaway?

There is no need to demonise Teflon. Intact Teflon, used normally, is probably not a major health threat. The risk increases with overheating, surface damage and very old pans of unknown origin.

From a precautionary point of view, the most sensible approach is to use Teflon carefully, avoid overheating it, and replace it as soon as it starts to peel or becomes significantly scratched. This reduces the risk of inhaling irritating fumes and limits unnecessary exposure to microplastic and nanoplastic particles.

For everyday cooking, more durable alternatives such as stainless steel, cast iron or carbon steel make sense in the long run. They may take a little practice, but they last for years, handle high temperatures well, and do not rely on a coating that can peel over time.

Can Teflon go in the dishwasher?

Some Teflon pans are labelled as dishwasher‑safe by the manufacturer, but in general, it is not ideal. Dishwashers, high temperatures, salt and stronger detergents can shorten the lifespan of the non‑stick surface. It is gentler to wash a Teflon pan by hand with a soft sponge and regular washing‑up liquid.

Is Teflon toxic?

Intact Teflon, used under normal cooking conditions, is probably not toxic. Problems are more likely when the pan is overheated, as irritating fumes can be released, or when the surface is damaged and peeling.
