One of Teflon’s main advantages is its high chemical and thermal stability. Under normal use, it does not easily react with food, significantly break down, or release large amounts of material into what you are cooking.
That does not mean it is indestructible. Teflon has limits. If a pan is overheated, scratched with metal utensils, or the surface starts to peel, it may no longer behave in the same way as an undamaged pan used at normal cooking temperatures. At that point, it is best to be cautious and stop using it.
Is regular cooking with Teflon dangerous?

Teflon is often discussed in connection with PFAS. This is a large group of chemicals nicknamed “forever chemicals” because they are highly stable and break down very slowly in the environment. EFSA states that people can be exposed to PFAS in several ways, including through food. These substances can be found, for example, in drinking water, fish, fruit, eggs and egg products.
One of the best‑known PFAS is PFOA, which was previously used in the production of some fluorinated materials. PFOA is considered problematic and has been associated with a number of health risks. The International Agency for Research on Cancer classified PFOA as carcinogenic to humans, group 1, and PFOS as possibly carcinogenic to humans, group 2B.
However, a modern Teflon pan is not the same thing as free PFOA in the environment or contaminated drinking water. The greatest health concerns relate to long‑term exposure to certain PFAS through water, food, packaging or industrial contamination.
Even so, caution is sensible. If you have a very old non‑stick pan, do not know where it came from, or can see that the surface is damaged, there is little reason to keep using it. Replacing it is a simple way to reduce unnecessary exposure.
When should you throw away a Teflon pan?
A Teflon or other non‑stick pan should be replaced if:
