Everybody loves a proper egg omelette. With a few ingredients and a few minutes, you can make a delicious and nutritionally balanced meal. We upgraded this one with some spinach and cottage cheese. You'll love it.
Instructions

Crack the eggs into a large bowl, add a tablespoon of water and whisk. Heat the ghee in a pan, add the whisked eggs and leave them to cook on a medium heat.

Add the spinach and then the cottage cheese. Carefully fold the omelette in the middle and leave it to cook for a couple of minutes more.

We recommend serving it with rye bread, soft cheese, avocado, pecan nuts and cherry tomatoes.
