  • 250 g puff pastry
  • 200 g mascarpone
  • 300 g fruit
  • 50 g golden cane icing sugar
  • 1 tsp vanilla extract
  • lemon zest
  • 1 egg

Instructions

  1. Preheat the oven to 180 °C.

  2. Roll the puff pastry into a 3mm thin layer and cut out rounds with the diameter of a muffin tin.

  3. Grease the tin with butter and add the puff pastry circles, creating a cup.

  4. Crack the egg, whisk it, and use it to wash the pastry top. That makes the cups golden.

  5. Bake in the preheated oven for 12‑15 minutes or until the cups are golden brown. Take them out and leave them to cool.

  6. Meanwhile, mix the mascarpone, icing sugar, vanilla extract and zest of 1 lemon in a bowl until you have a smooth cream.

  7. Top the baked cups with the mascarpone cream, using a spoon or a piping bag.

  8. Top with your favourite fruit (strawberries, raspberries, kiwi or blueberries) and serve!
