Peas are fully mature and usually dried seeds of the common pea, which belong to the legume family, while fresh/frozen green peas represent a fresh and not yet fully mature stage, whose nutritional values are closer to vegetables and contain less energy but more bioactive substances such as vitamins or antioxidants. On the other hand, dried peas contain more protein and fiber – so it’s up to you which one you choose for your culinary creations.
With green peas, however, you don’t have to bother with soaking and long cooking – their preparation is therefore much easier. You can use them, for example, in a quick spring salad with couscous and Balkan cheese or as a side dish to the legendary Swedish meatballs with mashed potatoes. But even dried split peas have their own charm, and their taste in creamy soups is simply unmistakable.
